Baking Through Yesteryear

Let’s just start with a picture…….

When one looks at a potato and semisweet chocolate, I’m sure the first thing that comes to mind is…..chocolate cake!

The family had just gotten home from a whirlwind trip to Hershey, the land of chocolate, seemed only fitting to bake a chocolate cake.

I did this one on my own, the kids were too busy having a light saber fight to help me……yes, we were still on a Star Wars kick.

The cake came together super fast. I will admit, adding mashed potato with the peel definitely felt strange.

Now came the best part of this recipe, THE ICING! Oh my goodness, I could have eaten a bowl full of this. This will be my go to chocolate icing for everything!!
