Baking Through Yesteryear

First off, I need to start with this may be one of the BEST desserts I’ve ever had. I love pineapple upside cake, pineapple dole whip, pineapple on pizza, even on a burger…….so let’s just say right off the bat I knew I was going to enjoy this.

So, last weeks dessert I overfilled my blender with Oreos and ruined my inexpensive Oster blender which was 25 years old!

So off to Target we went on search of a new blender, we ended up with the Ninja pro, not because I was particularly excited about it, but because this was the least expensive blender they had available.

Needless to say, Kiskadee Fantasy may be my most expensive dessert yet 😂

The crust was super simple; saltines, butter and sugar. When I make this again, I’d cut the crust portion down. At times it felt a bit overpowering.

I need to invest in cheesecloths. The paper towels worked ok, but I had to pick little bits of paper towel out.

Doesn’t this just look delightful? I’ve always been daunted by meringue, but this came together nicely and it reminded me of marshmallows.

Ah, my finished product. Ok, so it’s not the prettiest looking pie. I was worried about cracking the meringue so I ended up just lightly placing the pineapple and whipped cream on top.

This was my favorite bake yet! It was truly the perfect bite. Salty, sweet, buttery, chewy.

I will absolutely make this one again!
