I had a weird weekend, some unnecessary family drama. It had also been almost 10 days since our last bake, so to cheer myself up I looked for a simple recipe and decided to get back in the kitchen. And frankly, I wasn’t sure how I was going to top Kiskadee Fantasy…….seriously the most amazing dessert to date!

It’s been an interesting journey, even though I’m only 7 recipes in, I have found this project to be super grounding for me. I really look forward to each bake.

These came together in no time! I am really starting to enjoy meringues, egg whites and sugar, what a marvelous combination.

I didn’t let mine bake long enough and the inside was still a bit gooey. Don’t get me wrong, they were absolutely delicious, but I should have put them in for 23/25 minutes.

Once again, I’ve really enjoyed this, the simplicity and texture, they reminded me of a peanut buttery marshmallow.
