Post 11: Forgotten Cookies

One of these days I’m going to do some reading as to why so many of these yesteryear recipes are meringue based, I suppose a lot has to do with no leavening agent needed. These are simple ingredients, which you probably have in your kitchen at all times.

All we need here are egg whites, salt, sugar, vanilla, chocolate chips and nuts. The recipe called for pecans, but I had walnuts.

Once again, these were incredibly easy to put together.

I knew that I needed to let them sit a minimum of 4 hours or overnight, so as soon as breakfast was done this morning I put them in the oven ready to sit for the entire day.

And thus the most challenging part of this recipe came, THE WAIT! I didn’t trust myself or my family to not open the oven door, so I put out a little reminder for us.

So, the final verdict. We will most likely forget the Forgotten Cookie.

There was something off about the texture, if I tried them again I think I’d leave out the nuts. Or maybe there is a significant difference between pecans and walnuts?

Regardless, always something to learn and enjoyed the bake.
