Post 14: Admiral’s Gingerbread

Today is the first bake that felt like a chore. I’ve been overwhelmed recently with so many life changes, and the days have gotten away from me.

As best as we can, my friend and I try to coordinate our bakes so that we can taste together via FaceTime. Today was one of those days where suddenly it was 4pm, I still had laundry to fold, work to finish, groceries to put away and gingerbread to bake.

I must have read though this recipe a dozen times, the steps made absolutely no sense!

I was trying to get the kitchen organized, set up my mise en place, and I was absolutely surprised by the sheer number of bowls I was getting out!

Next thing I knew, the kids decided they wanted to help. Which is fantastic because I love helping them in the kitchen, but the chaos of 2 young kids and a wonky recipe had me worried.

I think by the time it was said and done I had 6 different bowls out! As we were putting together the different components I was definitely skeptical that this was going to work.

But finally it came together and looked like an actual batter!

This smelled absolutely amazing while it was baking! And it turned out so delicious. It was light and had just the right amount of spice. Even the kids enjoyed it!

This will definitely become my go to holiday gingerbread!
