We went to our local Zoo for Boo at the Zoo this weekend, I was a bit disappointed in the “treats” the kids received. Tooth brushes, Floss, Baby Food.
Not that my kiddos needed any more sugar or junk food in their lives, but Halloween is the time for silly trinket toys and candy!
So I decided to try my hand at the Wacky Cake, it didn’t require a trip to the store or a lot of time to put together.
So, why is this called Wacky Cake? Simply the way the ingredients are all put together.

I’ve never made a cake starting with the dry ingredients.
Also, where the butter and egg?
This cake had none!
I had never put vinegar in a cake recipe before, so I decided to look this up, basically it reacts with the baking soda and makes a fluffier cake! Totally makes sense.

This came together so easily. And there was nothing for clean up.

And look at that, it’s a cake! It took a bit longer to bake than the instructions indicated but I really think that’s an issue with my temperamental oven.
My 3 year old wanted to help and the frosting was super simple so she had a lot of fun.

But when I turned away she added much more water than called for so the frosting was more of a glaze. I ran out of coco powder so I only made a half portion of the frosting.

This was a solid recipe, easy and quick to put together. Didn’t require any difficult steps and would do fine with or without frosting. This will definitely become my go to homemade chocolate cake recipe.
