Post 16: Jell-O Poke Cake

Daylight savings was this past weekend, and with 2 small kids it means everyone is up super early and by 830 in the morning I’m trying to find something to do!

So we decided to make a poke cake. It had been awhile since I baked anything from Baking Yesteryear, so we quickly looked through the book and realized we had all the ingredients to make this. Well, we thought we had everything. I only had 2 eggs, so we decided to make half the recipe.

I am super happy with how engaged the kiddos have been with these recipes. Even though they don’t always enjoy eating them, there baking skills have greatly improved (as have mine).

But, speaking of being engaged. At one point I turned around to grab something from the counter and I could hear the kiddos laughing like nuts when I turned around to see what was going on I found them doing this!

Needless to say, I finished this portion of the dessert on my own.

Once the cake popped out of the oven the kids were excited to help again! Mostly they wanted to see what we were doing with the Jell-O!

I’ll be the first to admit I was totally skeptical, I thought the cake was going to turn into a soggy mess. But we put it in the fridge and waited patiently for it to cool completely.

Success! This was so good. It was a super light sponge and not at all soggy. The older child wasn’t interested but as you can see here, the youngest enjoyed herself!
