Post 19: Carrot Pie

Happy Thanksgiving! I can’t believe it is already Thanksgiving, the last several months have flown by!

When people start thinking about Thanksgiving, inevitably they start thinking about the food……so much food and so many desserts!

This year we decided to change up the traditional pumpkin pie for something different!

That’s right, you guessed it, a Carrot Pie!

So, with my 3 year old assistant baker by my side we got started on our Carrot Pie. Now when I shared the news with my husband that we wouldn’t be having pumpkin pie, but carrot pie, he was quite disappointed. You see, last year he was in Syria on deployment for Thanksgiving, and for our first holiday back together I was going off the rails!

My little assistant chef was having a great time helping make the pie crust. I don’t typically make pie crust from scratch, but I am really trying to follow these recipes exact so here we go.

Next up the Star of our show……the carrots!

By the time I peeled the carrots I had to measure a couple of times to keep adding carrots into the bowl.

Honestly, this felt just like a pumpkin pie, it used the same spices, ingredients, the only major difference was the pumpkin.

But look what a vibrant shade of orange that made!

I was skeptical. As was my family. My dad kept asking if this was a sweet or savory pie, I kept trying to explain it was the same recipe as pumpkin minus the pumpkin. But look at how this little beauty came out!

And as for the biggest skeptic of all, the person who was convinced I would be ruining the traditional Thanksgiving meal……well let’s just say he liked it too.
